Two days ago, I was making a simple rice / beans / veggies dinner (staying in line with Lindsetarianism) and ended up overcooking the rice. I stomached down one serving of the rice w/ that dinner and put the rest in the fridge with hopes to figure out how not to waste it.
So I tried to google what to do with overcooked rice, and saw that people typically make some kind of fried rice patty deal with it, but nothing that exciting. So I got home from work last night, looked at what I bought from the College Park Farmer’s Market last Sunday and made an awesome dinner that was super simple.
Let me know if anyone gives it a try! (P.S. I am one of those cooks that doesn’t measure…so just use your judgement).
Rice Patties
rice
grated sweet potato
diced onion
1 egg
shredded mozzarella cheese (from skim)
Bake for 10 minutes at 350° — turn and bake 10 minutes on the other side.
Garlic Aoli
low-fat / fat free mayo (from olive oil)
1 clove grated garlic
Combine.

The Levy family has always been procrastinators, from paying bills to studying for tests to making dentist appointments — always waiting until the last minute. I can’t tell you how many memories I have of being in elementary school and not having a permission slip from my mom the day of the field trip, and the school would have to call her…lol
Today, however, I did receive a nice surprise when I got back from lunch. An unexpected box sitting on my chair – from my mama. After I got halfway through the heavily taped box, I realized that my mom finally got around to sending me some Christmas Ale from the Great Lakes Brewing Company in Cleveland. Needless to say I am very excited to get boozing on this fine 7.5% alc./vol. craft beer.

One a side procrastination note — last night Push was honored with an Image Award from the Orlando Chapter of the Florida Public Relations Association for our work on the Smokey Bones Web Host program (for which I was leading the charge). Congrats to all Pushers involved. How was this procrastination you ask — I waited until about 5 hours before the deadline to prepare the entry.

Background Info: I am on a quest to reach my goal weight (about 25-30 lbs away) and get my nutrition back in check. So over lunch with my friend Susan, we were chat chitting about being vegetarians. I used to be a veggie, and decided to seriously take it under advisement.
With that said, I haven’t read Skinny Bitch or watched Food Inc. — and I don’t intend to — so my quest for vegetarianism is purely dietary. That means, I make the rules — and thus came Lindsetarian…ism.
Here is a play by play of the rules:
- For all intensive purposes — eat veggies whenever possible.
- Seafood is okay too.
- Bacon can be eaten whenever desired (but in moderation due to calories/fat etc.)
- A nice, big steak once a month at a maximum.
- Whenever I go to Café Tu Tu Tango (my fave restaurant) or Melt (in Cleveland), anything goes.
- And lamb chops w/ mint jelly about 2x per year (which is how often I eat it anyway ‘cuz it’s so $$$)

As some of you know, I’m pretty active in Orlando young professional advertising club (Ad 2 Orlando). In fact, we just launched our brand new website — check it.
Well, every other month, Ad 2 has a social where we all get together, drink, network, drink, dance, drink, etc.
And this month — there’s a theme. Let me give you a hint. The name of the event is The Situation.
Mmhm, it’s Jersey Shore.
I’ve decided to take a toned-down, Snooki approach to the evening, resembling this quote from Vinny — minus some of the more obscene parts (remember this a professional networking event people). lol “Snooki’s outfit is crazy, she looks like a birthday cake, she’s all decorated, dressed up, with the pink, boobs all out up in her face, I guess she wants to go out with a big bang, literally.”
Pics to come later. It’s okay, you can be jealous.

I am very sorry for neglecting you for the past 3 months, allowing spam comments to collect in your CMS, have visitors visit you to only think you’re a part of the statistic of blogs that get created and then forgotten. I am very sorry for that.
Dear Readers… (all five ten of you out there)
I have a very important update for you. When I started this blog, I thought I would just write about office supplies, and other pink items, and life would be great. Well, made apparent by my neglect — not the greatest idea. If you continue to follow my blog, or even visit from time to time, prepare yourself to see all that is me. It may be office supplies, PR rants, social media talk, chihuahua outings, Barbie, makeup and more.
When I started Pink Ink, I thought of it as a pink pen. Now I am thinking of Pink Ink more literally, in a way, where it is a pen full of pink ink writing my story, sharing my personal brand and life with all of you. I hope you enjoy.

So, let’s be honest. I’ve been less than diligent with this blog in mid-late 2009 — as occurs with most blogs I presume. Since my 2009 resolution was to start a blog, I find it only fitting that one my 2010 resolutions is to manage it better.
I am going to put some time into really thinking about the purpose of this blog and a strategy for managing it regularly in addition to my 60 hour a week job.
I am open to suggestions. I feel like Pink Ink Blog could be so much more than just sharing cool pink items I find on the Web. I live, breathe and exude pink — and really want to find more ways to share that with all of you.
Pink Ink Blog may begin with pink office supplies, but I know it can go so much farther. So, here’s to 2010 and more/better Pink Ink than you saw in 2009.

Today is my 25th birthday, a quarter of a century. With birthdays come presents, and this year mine came with 25 small gifts from my mom.
I’m not gonna lie, mom’s not always right on the bulls-eye with gift giving for me…which is understandable considering I have lived many states away for about 5 years now. So when I saw a large box arrive in my cubicle this morning, I got to thinking it wasn’t a check.
After opening the box and card, it was clear mom took some extra time this year and bought me 25 fun and special gifts for my 25th bday. I thought it was only appropriate that I take a comparable amount of time saying “thanks” and sharing my awesome gifts with all of you.
Not sure if mom was reading my blog, or squeezing my bro & sis-in-law for info…but she was right on with MOST of the gifts. I also feel the need to point out how she wrapped every piece (something I like to do when giving gifts) just because unwrapping stuff is fun.

Anyway, just wanted to take this opportunity to say, thanks ma.

So, I just got glasses, and then realized what better accessory to go with them than a matching USB drive? Too bad this isn’t pink. Thank goodness for Fred Flare.

I love pengawins…but I also love monkeys. And especially if they’re pink. The Container Store says these are perfect for a bathroom or kid’s room — but I’m thinking the office is the most appropriate place. I can totally picture these hooked onto an office door or cubicle wall with a blazer hanging off of it. If I had photoshop, I’d totally mock it up…but I don’t.

If you’re lucky, international travel is a part of your job. Mine, not so much at the moment, but who knows! And when that day comes, I’ll want to be ready to travel in style with this cute passport cover.
See Jane Work has a lot of really adorable things right now, and this is only one of them. However, at $21 bucks, it’s a little pricey. But then again, who can put a price on cuteness?
